  1. Place the chicken into a glass container and put the lemon juice, oil, salt and pepper into a shallow dish
  2. Beat the lemon juice, oil, salt, and pepper with a fork until well combined; then pour over the chicken making sure they are well covered in the mixture. Let stand for one hour in the refrigerator.
  3. Remove the chicken pieces from the mixture and pat dry with a paper towel.
  4. Beat the eggs in a soup plate and gradually add in the salt and pepper
  5. Coat the chicken pieces with flour, dip into the egg, and fry in hot oil until the chicken is golden brown on all sides.
  6. Remove the chicken from the oil and put it on a rack to drain in a moderately hot oven leaving the oven door open, until you are ready to serve.
