MLuccio's Italian Hanukkah Chicken

Ingredients
- 1 chicken (skinless or boneless breasts will work)
- 2 cups extra-virgin olive oil
- 1 juiced lemon
- 2 cloves crushed garlic
- 2 tbsp. minced Italian parsley
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper
- 1 cup flour
- 2 eggs
Directions
- Place the chicken into a glass container and put the lemon juice, oil, salt and pepper into a shallow dish
- Beat the lemon juice, oil, salt, and pepper with a fork until well combined; then pour over the chicken making sure they are well covered in the mixture. Let stand for one hour in the refrigerator.
- Remove the chicken pieces from the mixture and pat dry with a paper towel.
- Beat the eggs in a soup plate and gradually add in the salt and pepper
- Coat the chicken pieces with flour, dip into the egg, and fry in hot oil until the chicken is golden brown on all sides.
- Remove the chicken from the oil and put it on a rack to drain in a moderately hot oven leaving the oven door open, until you are ready to serve.

- For the health conscious, this recipe may be prepared by roasting the chicken.
