Seafood's Lobster Mexicana

- 2 cups cooked lobster
- 6 tbsp. fat
- 1 large minced onion
- 1 minced green pepper
- 4 cups cooked tomatoes
- 3/4 tsp. salt
- 1 tbsp. sugar
- 1/4 tsp. cloves
- 1 bay leaf
- 1 cup sautéed mushrooms
- 1 dash Tabasco sauce
Directions
- Cut lobster meat into walnut-sized pieces (make sure all spines are removed)
- Melt 3 tablespoons of fat in a saucepan
- Add onion, green pepper, tomatoes, salt, sugar, cloves, and bay leaf.
- Simmer for 15 minutes.
- Remove bay leaf
- Add mushrooms, the remaining fat, Tabasco sauce, and the lobster meat.
- Simmer until lobster is heated and serve.
