Seafood's Crab-meat Rarebit

Ingredients
- 3/4 cup cooked crab meat
- 2 tbsp. fat
- 2 tbsp. chopped green pepper
- 3 tbsp. flour
- 1/4 tsp. dry mustard
- 3/4 tsp. salt
- 1 dash pepper
- 3/4 cup tomato juice
- 3/4 cup grated American cheese
- 1/2 cup milk
Directions
- Remove any spines from crab meat and melt the fat
- Add green pepper and cook for 5 minutes
- Blend in flour and seasonings
- Add tomato juice gradually and cook stirring constantly
- Fold in crab meat and heat to boiling
- Serve in bread croustades, in par-boiled halves of green pepper, or on toast
