Citracyde's Oyster Stuffing

- Separate the oysters from the oyster liquor (the juice). Set the oyster liquor aside.
- Remove any shell particles and chop the oysters if they are large.
- Simmer oysters in liquid for 3 minutes (or until the edges of the oysters begin to curl).
- Mix butter or margarine, salt, poultry seasoning (or 1/2 tsp. each of Thyme, Rosemary, and Marjoram) and pepper.
- Lightly toss butter mixture with oysters, oyster liquor, bread cubes, milk, celery with leaves, and onion.
Additional Information
Leftover Preparation
- If used in stuffing a turkey, remove stuffing from leftover turkey before storing in the refrigerator. Store leftover stuffing in a covered bowl.
